3 Bean Salad*
Ingredients - 1 x Chickpeas, 1 x kidney beans, 1 x canellini beans (all drained + washed), Veggies - 2 carrots, 2 celery, 1 onion, 1 pepper, 1 courgette (all diced finely), Dressing - zest half lemon, 1 tsp lemon juice, 1 garlic clove (crushed), 1 tsp white wine vinegar, 1 tsp dijon mustard, 3 dsp oil, 1/2 tsp mixed herbs
What to do - Mix the prepared beans and veg together in bowl. In a jug, whisk together the dressing ingredients and pour over the veg/beans. Serve with a spoonful of homemade hummus - it's de-lish-ous!!
*this salad can be stored for up to three days in the fridge
